Sorry for the lack of posts recently…my sister has just had a little baby boy, so I’ve been spending most of my time with him cooing over his teeny tiny hands, feet, fingernails, nose…you get the idea!
I know a few people enjoyed my chilli recipe, so I figured I’d share another favourite of mine with you. This was inspired from something I had in Rhodes last year, and doesn’t follow a specific recipe per se, so everytime I make it it’s a little bit different (but just as yummy!)
1 medium onion
1 medium courgette
1/2 block feta cheese
1/2 pot olives
Italian seasoning mix
Start by cutting up all the veg into relatively small size chunks. Fry off in a a tablespoon of oil until they become soft.
Add in the chopped tomatoes (or chopped fresh if you have some) and simmer until some of the water has reduced off. Add in a teaspoon of all the herbs.
Put the wholemeal spagetti into a pan of bubbling water and boil for approx 10mins or until al dente (if you use your nail to split it it should have a slightly lighter core, but not be hard when you chew it).
Chop the feta and olives up into bite size pieces, and add to the sauce, allowing the feta to melt slightly whilst the spagetti is cooking.
Note; as feta has a low fat content it won’t melt like cheddar or mozzerella, but just add a nice creamy consistency to the sauce.
Add the spagetti, stir through and serve with salad or garlic bread.

Sorry I haven’t updated the post for a few days but I’ve had a few days away relaxing with my mum in sunny Gozo. For those of you who don’t know (I didn’t until I booked the trip!) Gozo is a small island off the coast of Malta. We stayed in the resort of Xlendi which in my opinion is the best resort on the island…it has a very chilled, italian feel to it with little bars and restaurants positioned through a natural harbour. We spent the days exploring the island then topping up our tan by the pool, then in the evenings we would get dressed up and potter down to the harbour for some delicious food and wine.
I managed to pack quite lightly – one 20kg case shared between my mum and I – and wore pretty much everything I took, which is pretty good for me! Here is what I wore every evening…

Yesterday I went to Haydock races with my better half and his work collegues. It was a fab day and strongly recommended. We didn’t go in the ‘posh’ area so I was unsure of what to wear and my outfit took an hour or so of debating – I wanted to look slightly dressed up but still retain a casual vibe, and most of all needed to be comfy in the afternoon heat! Here’s the outfit I finally settled on, I think it worked well…although top tip – never wear a large necklace in the sun! I have some very interesting tanlines today!!

Last week I told you that I’d bought a amazing Zara PU Laser cut top in the sale, and was desperate to wear it. I had a baby shower on Saturday and thought it would be perfect for this, as it was smart yet not too dressy. I paired it with some topshop skinny jeans and a cute black necklace from Primark. Yesterday my friend and I spent the afternoon shopping at the Trafford Centre. Nearly every store had a sale on and I had to control myself not to spend all my money in one go!

I absolutely love the Zara PU tee and am already thinking of different ways to wear it. I also love the floral H & M jacket which is a really lightweight poly silk fabric – it can be dressed down with jeans or up with a nice dress. I’m wearing the jacket today so will try and get some pics on later if I can.

I just had to share with you my newest purchase. Now I’ll warn you…this is a marmite item and you’ll either love it or hate it – I love it, my husband hates it!
I got it from a small shop in West didsbury (a small suburb in south manchester for all you non-mancs!) called JUNK – there is also another store in the Northern Quarter. I spotted this shirt about a month ago, and didn’t get it. It played on my mind for ages and when I walked past the shop again on Friday and spotted it in the window I knew I just had to get it!! It’s by a label called One’s Best Boy who I hadn’t heard of before…I’ve done some digging on the web but can’t find much out about them, however JUNK seem to stock quite a few of their items and I found a link to their blog;
If you are out and about in Manchester I definately recommend popping in, the shirt was £35 and more than I would usually spend on a single item but they do stock some bargain items and you can be guaranteed that you won’t be seeing many people seeing the same piece!
